An experienced sommelier and president of the Association des Sommeliers Lyonnais Rhône-Alpes (ASLERA), Frédéric Schaaf has dedicated over 30 years to the world of wine. His passion started at the Metz hotel school where he trained as a sommelier. After an intense formative period with a master of the trade, he worked as head sommelier in a restaurant, then had a decisive encounter with renowned industry professional Maryse Allarousse which led him to get his own wine cellar in 2000 that he renamed "Cave Frédéric Schaaf".

In 2002, he received the prestigious title of ‘Master of Port’, testifying to his expertise in Port wines. Frédéric Schaaf has also become a reference for people who specialise in sommellerie and are studying for the professional sommelier certificate. This role helps him support trainee sommeliers and be on the exam board that awards diplomas.

His wine cellar is distinguished by a unique selection of wines and spirits, with a strong emphasis on local producers, particularly from Beaujolais. In addition to being a classic wine merchant, he organises luncheons that match up food and wines and hosts educational wine-tasting evenings. As president of ASLERA since 2023, Frédéric Schaaf strengthens the links between sommeliers, winegrowers and schools in the region by actively participating in wine events and supporting the transmission of the winemaking tradition with new generations of winegrowers.
