Jérémie Crauser

Jérémie Crauser is the son and grandson of charcutiers and grew up alongside his father, learning the ropes of the trade at a very young age—a craft he has been practicing for 15 years. After earning a CAP in butchery and a CAP in charcuterie, he worked as a head charcutier in Lille before becoming a charcuterie consultant, a journey that took him all the way to Russia. In 2020, along with his business partner Frédéric Bello, he founded Maison Crauser-Bello in Lyon.
His specialty, pâté-croûte, is the result of many months of research, subtly combining the art of preparing gravies and jellies with traditional charcuterie expertise. This commitment to excellence earned him the title of world runner-up in pâté-croûte in 2022 and 2023. Dedicated to upholding traditions, Jérémie Crauser embodies a level of dedication and passion that does credit to his craft.
Marc Janin

Marc Janin est crémier-affineur à Champagnole, dans le Jura, où sa famille exerce ce métier depuis cinq générations, débutées en 1885. Enfant, il grandit dans la fromagerie familiale aux côtés de son père Michel, dont il hérite le goût du métier, la rigueur et la curiosité. Après un BTS à l'ENIL de Mamirolle et trois années passées à la fromagerie Sancey-Richard à Métabief, il entreprend un véritable tour de France des crémiers-affineurs, se formant auprès de figures emblématiques comme Laurent Dubois, Bruno Collet, Hervé Mons ou encore la maison Sterchi.
En 2008, il reprend la boutique familiale à Champagnole et inscrit son travail dans la continuité de ses aînés. En 2015, il obtient le titre de Meilleur Ouvrier de France Fromager, une distinction qui récompense autant son propre parcours que l'engagement d'une famille entière et une passion transmise depuis près de 140 ans. Il reste aujourd'hui le seul détenteur de ce titre en Bourgogne-Franche-Comté.
